Decadent Protein Fudge

Fudge fans, where you at!? If you’re like me, you enjoy nothing more than digging into a deliciously sweet treat after dinner, because dessert is the BEST part about the day am I right!?

However, we should all know by now that treats like fudge are absolutely FILLED with refined sugar and sweeteners. Of course, I preach that everything is fine in moderation and you should allow yourself to enjoy these soul foods every once in a while, but what if I told you we could enjoy fudge more often… a more nutrient dense version. Who wouldn’t want to try that!

I’ve also killed two birds with one stone with this recipe! Did you know that most young girls don’t consume enough protein in their daily diet? That’s why I really like to incorporate my favourite caramelised popcorn plant protein from Botanika Blends into lots of my treats! GUYS, this recipe tastes just like the real thing and is completely vegan and refined sugar free! Enjoy!

You will need:

  • 4 Tbsp nut butter (I prefer peanut butter, YUM!)

  • 1/2 cup granola (I use Nutii Boost) or alternatively mixture of nuts or seeds (If you want to try Nutii Boost, use code GEORGIE for a discount)

  • 2 Tbsp rice malt syrup ( or raw honey or natural maple syrup)

  • 1 serving of protein powder (I use caramelised popcorn flavour by Botanika Blends - details below!)

  • 3 tbsp coconut pil

  • 1 tsp vanilla essence

  • Pinch of Himalayan salt

How to make it:

  1. Line a rectangular tupperware container or small baking tin with baking paper.

  2. Melt coconut oil and rice malt syrup in a saucepan on LOW HEAT (do not bring to the boil). Whisk until combined.

  3. Add nut butter, vanilla essence, Himalayan salt and protein to mixture and whisk until combined. Momentarily remove the saucepan from the stove to ensure mixture does not overheat.

  4. Pour mixture into container or baking tin. Sprinkle granola on top of mixture allowing some to sink to the bottom of the container or baking tin.

  5. Place in the freezer for an hour or until set. Once hard, remove from freezer and cut into squares. Store in the fridge.
