Coconut Curry Dhal & Flatbread

Does anyone else go through a new food obsession each month? Because I sure do.

I am currently obsessing over my new Coconut Curry Dhal recipe, and I have had a bunch of requests for the recipe so I thought there’s no better way then sharing it on my blog with you. This recipe is wholesome, full of flavour and perfect for these colder months in Australia, Enjoy!

WHAT YOU WILL NEED:

  • 1 brown onion, chopped finely

  • 1 knob ginger, chopped finely

  • 2 cloves garlic, chopped finely

  • 1 cup Red lentils

  • 1 tsp salt

  • 4 tbsp red curry paste

  • 2 tbsp tomato paste

  • 200ml coconut milk

  • 1 carrot, grated

  • 1 capsium, chopped

  • 1 handful of spinach

  • Mini flour tortillas

HOW TO MAKE IT:

  1. In large saucepan, heat olive oil or butter over medium heat. Add onion and cook for 2-3 minutes. Add garlic and ginger and cook for 1 minute.

  2. Add curry, tomato paste and stir for 1 minute.

  3. Add 3 cups of water, salt, red lentils and coconut milk. Stir, cover with lid and cook for 20-25 minutes.

  4. In the last 10 minutes stir in carrot and capsiucum.

  5. In another sauscap, heat olive oil and cook tortilla for 2 minutes each side until crisp.

  6. When dhal is cooked, stir through spinach leaves. Season with salt and pepper.
