Healthy Banana Muffins

Is there anything better than enjoying a freshly baked banana muffin with a nice cuppa when that 3pm sweet craving hits? I love muffins because they make the perfect snack for those busy days at work or uni, but I’m just NOT a fan of the added processed sugars and additives that come along with store bought muffins. 

I set out to create the perfect healthy banana muffin that still satisfies my cravings and satiates my hunger - and guys, I think I’ve done it! You know the best part? You can easily store these muffins in the freezer and take them out to enjoy later!

These muffins make 6 and are completely refined sugar free and free from any additives! So enjoy!

You will need:

1 cup of dates

2 eggs

2 bananas

1/4 virgin coconut oil

1 tbsp chia seeds

1 cup almond meal

1/2 cup mixed nuts & seeds

1 tbsp baking powder

1 tbsp cinnamon

Pinch of sea salt

 

How to make it: 

  1. Blitz all ingredients into a food processor.

  2. Pour mixture into a muffin tray.

  3. Bake in an oven at 160 degrees (fan forced) for 30-35 minutes.
